Chicken Stew Warms the Soul

5 lbs of boneless, skinless chicken (I use thighs)
5 lbs potatoes, scrubbed and thickly sliced
2.5 lbs onions, thickly sliced

Arrange layers in order in 16 quart stock pot, repeating layers once.

Mix together:
1 cup ketchup
1 cup of sugar (or sugar substitute)
1/2 stick butter

30 ounces tomato sauce
1 can diced tomatoes with roasted garlic (I use Italian style tomatoes)
1 small bottle of Texas Pete

Pour over chicken/taters/onions & do not stir.  Add enough hot water to fill the pot 3/4 full.

Bring to a boil, reduce heat & simmer 1 hour.

Yummmmm.  Trust me.  Better yet, try for yourself.

    I’ve seen this done with Chicken breasts too 🙂
