They didn’t deserve it

But they got it anyway.

Chicken and dumplings.  Squash, turnip greens & peach cobbler too.  Now, they owe me.  BIG. 😉

    We had slow roasted beef, buttered potatoes and peas. Yummy!

    Wow! For some reason, Mrs. Crucis cannot make Chick ‘n dumplins. She’s tried using pie dough (worked somewhat), Bisquick, cut-up frozen biscuits, she’s even tried Crackle-Barrel’s recipe. Every time, we either get chicken soup swimming in little pieces of dough of one BIG matzo ball type dumplin.

    Recipe, please?

    I had the chicken soup problem quite a bit until I consulted with Mama as to what I was doing wrong-

    Boil your choice of chicken in water that’s been salted & peppered.

    Remove chicken.

    Add milk until you have the desired amount of “juice” you want. 😉

    For the dumplings-
    4 cups self-rising flour
    3/4 cup Crisco shortening
    salt to taste
    COLD WATER to make a very sticky dough- stickier than you’d want biscuit dough

    Turn out on a heavily floured surface and knead. Knead TOO MUCH- like twice as long as you would for biscuits. Roll them out TO 1/4 inch thick, cut them the desired size, then LIGHTLY dredge them through the flour again, just before dropping them into the broth (brought to a rolling boil).

    After you drop them all in, add the chicken back, make sure all the dumplings are covered (although they will be floating), put the lid on the pot, cut the heat off and let it sit for a few minutes.
